Glazed Apple Cookies

cookie photoDough:

  • 2 cups sifted flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon ground cloves
  • 1/2 teaspoon nutmeg
  • 1/2 cup shortening
  • 11/3 cups light brown sugar
  • 1 egg
  • 1/4 cup apple juice or milk
  • 1 cup chopped nuts
  • 1 cup chopped raisins
  • 1 cup chopped, unpeeled apples (use sweet apples)

Icing:

  • 1 3/4 cups powdered sugar
  • 1 1/2 tablespoons butter or margarine
  • 3 1/2 tablespoons milk or apple juice
  • Dash of salt
  • 1/4 teaspoon maple flavoring

Preheat oven to 400 degrees.

For dough, sift flour, baking soda, salt and spices together, and set aside.

Cream shortening and brown sugar; add egg. Add sifted dry ingredients alternately with apple juice or milk. Fold in chopped nuts, raisins and apples. Drop by heaping teaspoonfuls onto greased cookie sheet about 2 inches apart.

Bake for 10 to 12 minutes, then remove from cookie sheet.

For icing, cream powdered sugar and butter; add milk or apple juice, salt and maple flavoring. Mix until spreading consistency. While cookies are warm, frost them.
