Starlight Mint Surprise Cookie
- 1 cup (2 sticks) butter (half shortening may be used)
- 1 cup sugar
- 1/2 cup firmly packed brown sugar
- 2 eggs, unbeaten
- 2 tablespoons water
- 1 teaspoon vanilla
- 3 cups sifted all-purpose flour
- 1 teaspoon soda
- 1/2 teaspoon salt
- 1 9-ounce package solid chocolate mint candy wafers, such as Andes
- 54 walnut halves
Cream butter, sugar and brown sugar. Blend in eggs, water and vanilla; beat well. Add dry ingredients; mix thoroughly. Cover and refrigerate at least 2 hours.
Preheat oven to 375 degrees.
Enclose each chocolate mint candy wafer in about 1 tablespoon of chilled dough. Place on greased baking sheet about 2 inches apart. Top each with a walnut half.
Bake 10 to 12 minutes.
Makes 4 1/2 dozen cookies.
Times testing note: This recipe was a $10,000 winner in the 1949 Pillsbury Bake-Off. It looks like a plain cookie, but the mint inside lends a nice surprise.
