Since grouper harvest stopped Feb. 15 for its annual breather, some restaurateurs are running short. Smart ones who stay close to the boats like Tierra Verde's old salt Billy Moore laid in a good supply before the ban, packed boatloads on ice and froze more. Some will rely on imports. A good reminder to ask where fish comes from -- and to vary your choices.
