Apple Crumble Pie

Makes 4 servings.

For the crust:

12 graham cracker squares, crushed
1/4 teaspoon cinnamon
3 tablespoons light margarine, melted

Combine all ingredients, mixing until crumbs are moistened. Press crumbs onto bottom and sides of 9-inch pie plate. Fill crust with filling (recipe below). Sprinkle topping (recipe below) over filling.

Bake at 350 degrees for about 1 hour or until apples are done and pie is bubbly.

Makes 8 servings.

For the filling:

5 cups tart apples, peeled, cored and sliced
2/3 cup sugar
1/4 cup flour
1 teaspoon vanilla

Combine all ingredients in large bowl and mix well. Spoon into crust.

For the topping:

3/4 cup flour
1/3 cup light brown sugar
1 teaspoon cinnamon
6 tablespoons light margarine

Combine flour, sugar and cinnamon in small bowl. Blend in margarine until mixture is crumbly.

Per serving: 275 calories, 6.8g fat, 53g carbohydrates, 3g protein, 2g fiber, 248mg sodium.

Apple Betty

1/2 cup sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon
5 cups peeled, cored and sliced cooking apples (5 medium)
5 cups white bread cubes (about 7 slices)
3 tablespoons butter or margarine, melted
Whipped cream, optional

For the filling: In a large mixing bowl, combine sugar, flour and cinnamon. Add apples, toss to coat. Add 2 cups of the bread cubes; toss gently until combined.

Transfer filling to an ungreased 2-quart square baking dish.

For the topping: Place remaining bread cubes in a medium mixing bowl. Drizzle with melted butter or margarine; toss to coat. Sprinkle topping over fruit filling.

Bake at 375 degrees for about 30 minutes, or until fruit is tender and topping is golden. If desired, serve warm with whipped cream.

Makes 6 servings.

Per serving (without whipped cream): 407 calories, 9g fat, 7g protein, 76g carbohydrates, 6g fiber, 399mg sodium.

Apple Pie

5 large Winesap apples
9-inch pie crust, unbaked
3/4 cup sugar
1/2 stick margarine

Peel and core apples. Cut into 1/8-inch rings. Place half of the apple rings over pie crust. Sprinkle half of the sugar over apples.

Cut margarine into pats. Layer half of margarine over apples and sugar. Repeat with another layer of apples, sugar and margarine.

Top pie with lattice crust, if desired.

Bake at 400 degrees for 10 minutes. Reduce oven temperature to 350 and continue baking for 1 hour.

Makes one 9-inch pie, six servings.

Per serving: 278 calories, 10g fat, 1.35g protein, 48g carbohydrates, 2g fiber, 147mg sodium.

Baked Granola Apples

4 Golden Delicious or Granny Smith apples
11/2 cups granola cereal
1/4 cup raisins
3 tablespoons ground cinnamon
3 tablespoons sugar
1/2 cup butter or margarine, melted
Whipped topping or vanilla ice cream

Core apples almost to bottom and cut enough apple away from core area to make a good "well" in the center. Place apples in slow cooker and spoon enough granola cereal into each apple to almost fill the well. Finish filling the well with 1 tablespoon of raisins.

Mix ground cinnamon and sugar together and sprinkle over filling in apples. Drizzle melted butter or margarine over filling. Cook on low for 3 to 4 hours.

Remove and immediately top with whipped topping or vanilla ice cream.

Makes 4 servings.

Per serving with 1/4 cup vanilla ice cream: 476 calories, 25g fat, 4g protein, 65g carbohydrates, 8g fiber, 96mg sodium.

Torta Di Mele al Burro (Buttery Apple Cake)

1/2 cup plus 1 tablespoon unsalted butter
3 apples (Golden Delicious) peeled, cored and cut into 1/4-inch thick slices
2/3 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
2 whole eggs, plus 1 egg yolk
1 teaspoon vanilla extract
1 cup granulated sugar
1/2 teaspoon grated lemon zest
Confectioners' sugar
Preheat oven to 375 degrees.

Generously butter a 9-inch round cake pan.

Melt the butter in a large frying pan over low heat. Pour 6 tablespoons of it into a small bowl or cup and set aside. Add the apple slices to the butter remaining in the frying pan and cook, stirring occasionally, until the apples are tender, about 10 minutes. Remove from heat.

In a small bowl, stir together the flour, baking powder and salt. In a large bowl, beat the whole eggs and egg yolk until blended. Add the 6 tablespoons melted butter, vanilla, granulated sugar and lemon zest. Stir in the flour mixture and the apples. Spoon into the prepared pan, smoothing the top.

Bake until the cake is browned, 30 to 35 minutes. Transfer to a wire rack and let cool in the pan for 5 minutes. Invert the cake onto a plate and lift off the pan, then invert the cake again onto the rack and let cool completely.

Just before serving, place confectioners' sugar in a small sieve and dust the top of the cake.

Per serving with 1 tablespoon confectioners' sugar: 354 calories, 15g fat, 4g protein, 54g carbohydrates, 2g fiber, 255g sodium.

Homemade Applesauce

5 medium apples, peeled, cored and cut into wedges
1/2 cup packed light brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt

Microwave the apples in a glass container covered with plastic wrap for 10 minutes on high or until very soft (see note).

Mash the apples into applesauce with a potato masher. Stir in brown sugar, cinnamon and salt. Serve hot or cold.

Per serving: 179 calories, 0g fat, trace protein, 49g carbohydrates, 3g fiber, 305mg sodium.
