For best zest, scrub fruit

When using citrus zest in your holiday dessert recipes, scrub the fruit thoroughly with cool, running water before removing the skin.

Doing so removes most of the wax and/or pesticides from the fruit's surface.

Concerned about pesticides?

You may want to use organic fruit, which tends to carry less residue.
