A selection of readers’ favorite Christmas cookie recipes tested by the Times.

Snowball Surprises

1 cup (2 sticks) softened butter
1 teaspoon vanilla extract
13/4 cups all-purpose flour
1 cup finely chopped walnuts
1/2 cup sugar
1 6-ounce package chocolate kisses
Confectioners’ sugar

Blend first five ingredients well. Refrigerate for one hour until dough is firm.
Preheat oven to 375 degrees.
Wrap enough dough around each unwrapped kiss to cover completely, and shape into a ball. Place on cookie sheet and bake for 12 minutes. Roll in confectioners’ sugar while still warm.
Store in airtight container.
Reader note: I like to freeze the kisses before I bake them so they retain their shape and consistency. For an extra surprise, I also like to use the different varieties of kisses now available (i.e., caramel, dark chocolate, almond, etc.).
Times testing notes: We tried freezing the chocolate candies but liked them better a little softer. To each his own on this one!
