A selection of readers’ favorite Christmas cookie recipes tested by the Times.

Apple Spice Bars

1/4 cup shortening
1/2 cup sugar
1 egg
1/2 cup molasses
2 cups all-purpose flour
11/2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon baking soda
1/2 cup milk
1 cup (10 ounces) chopped dates
11/2 cups chopped raw apple (11/2 large apples)
Confectioners’ sugar

Preheat oven to 375 degrees. Cream shortening and sugar until fluffy. Add egg and molasses; beat well. Sift dry ingredients and add alternately with milk. Fold in dates and apples. Pour into greased 9- by 13-inch pan. Bake at 375 degrees for 25 minutes.
When cool, cut into 3- by 1-inch bars and dust with confectioners’ sugar. Makes three dozen cookies.
Times testing notes: This is a very moist bar that could almost be served as a cake with vanilla or seasonal holiday ice creams such as peppermint or pumpkin.
