Pecan Puffs
1/2 cup (1 stick) butter
2 tablespoons sugar
1 teaspoon vanilla
1 cup all-purpose flour
1 cup pecans, finely chopped
Confectioners’ sugar
Preheat oven to 300 degrees.
Cream butter. Add sugar, vanilla, flour and nuts. Roll into balls and place on ungreased cookie sheet. Bake for approximately 35-45 minutes. Remove from oven. Let cool for 5 minutes. Roll in confectioners’ sugar. Let cool again and then roll again in confectioners’ sugar. Makes approximately 2 dozen cookies.
