Egg salad sandwich.

The humblest kind - simple egg salad, lettuce and tomato on toasted rye -for me is the most refreshing hot-weather lunch going, but it's hard to find in restaurants. Too bad, because it's a great cheap treat, and you can dress it up with mustard, curry, peppers, onions, herbs and spicy vinegar if you want to cut the fat. Or you can fire up the cholesterol with bacon and mayo. Then we can move on to the revival of shrimp salad sandwiches.
