IACP awards announced

DALLAS - The 2005 cookbook awards of the International Association of Culinary Professionals were announced at the association's recent 27th annual conference in Dallas. The purpose of the awards, the IACP says, is to "honor the best writing and publishing in the food and beverage industry."

Major honors went to:

* Arthur Schwartz's New York City Food: An Opinionated History and More Than 100 Legendary Recipes by Arthur Schwartz (Stewart, Tabori & Chang), named cookbook of the year, and winner of the American category.

* The Breath of a Wok: Unlocking the Spirit of Chinese Wok Cooking Through Recipes and Lore by Grace Young and Alan Richardson (Simon & Schuster), winner of the Jane Grigson Award for distinguished scholarship in the quality of its research and presentation, and winner of the international category.

Other awards included:

* A Blessing of Bread: The Many Rich Traditions of Jewish Bread Baking Around the World by Maggie Glezer (Artisan), winner of the bread, other baking and sweets category.

* Bouchon by Thomas Keller with Jeff Cerciello, Susie Heller and Michael Ruhlman (Artisan), winner of the chefs and restaurants category, and winner of the food photography and styling category with photography by Deborah Jones and food styling by Jeffrey Cerciello.

* Cooking New American: How to Cook the Food You Love to Eat: 200 Recipes From Fine Cooking Magazine by the editors of Fine Cooking Magazine (Taunton Press), winner of the compilations category.

* Bread: A Baker's Book of Techniques and Recipes by Jeffrey Hamelman (Wiley), winner of the first book category, Julia Child award.

* On Food and Cooking: The Science and Lore of the Kitchen by Harold McGee (Scribner), winner of the food reference-technical category.

* Williams-Sonoma Entertaining: Inspired Menus for Cooking with Family and Friends by George Dolese and Steve Siegelman (Oxmoor House), winner of the general category.

* Getting Thin and Loving Food!: 200 Easy Recipes to Take You Where You Want to Be by Kathleen Daelemans (Houghton Mifflin), winner of the health and special diet category.

* Poet of the Appetites: The Lives and Loves of M.F.K. Fisher by Joan Reardon (Farrar, Straus and Giroux), winner of the literary food writing category.

* All About Braising: The Art of Uncomplicated Cooking by Molly Stevens (W.W. Norton & Co.), winner in single subject.

* Everyday Dining with Wine by Andrea Immer (Broadway Books), winner of the wine, beer or spirits category.

* The Japanese Kitchen by Kimiko Barber (Kyle Cathie Limited), winner for design.
