Any way you slice it, ice-box pie is cool

Patricia Kennedy was looking for a recipe for strawberry ice-box pie. Three very different recipes were sent in. Two are made with cream cheese, the third with pudding and gelatin mix. And Millie Liscinski shares strawberry cream-cheese pie.
Anna Martin Pennington recommends her Strawberry Dream Pie recipe. She made it a lot in the 1960s and 1970s, and she plans to make it again. Anna says the pie is cool and delicious in hot weather. Strawberry and Banana Ice Box Pie is the recipe Joan Capen sends for Patricia. The preparation time is only 15 minutes, and the pie is ready to eat in a little more than two hours.
Joy Engle enjoys Luby's carrot and raisin salad and wanted a recipe so she can make it at home. Carol Robards, Terrylynn Came and Karen Schlemmer have made her day; all of them share the recipe from Luby's 50th anniversary cookbook.

Recipe: Strawberry Cream Cheese Pie.
Strawberry Cream Cheese Pie
1 ready-made pie crust
2 (8-ounce) packages cream cheese, softened
1 package frozen strawberries, in syrup, thawed
1/4 cup sugar
1 teaspoon vanilla
2 cups whipped topping
Strawberries, halved, for garnish
Drain strawberries. Reserve 1/4 cup of syrup from thawed strawberries. Beat cream cheese, strawberries, sugar, vanilla and 1/4 cup reserved syrup until blended. Fold in 2 cups of whipped topping. Spread mixture in crust and refrigerate overnight or at least 8 hours. Top with whipped topping and garnish with half strawberries.

Recipe: Strawberry Dream Pie.
Strawberry Dream Pie
1 (4-serving size) package vanilla pudding and pie filling
1 (3-ounce) package strawberry gelatin
2 cups water
1 teaspoon lemon juice
11/2 cups whipped topping
1 cup sliced strawberries
Combine pudding and pie filling, strawberry gelatin, water and lemon juice in saucepan. Cook and stir over medium heat until mixture comes to a boil. Pour out into a bowl and refrigerate until chilled.
Blend whipped topping into chilled mixture. Stir in strawberries. Pour mixture into baked and cooled 9-inch pastry pie shell. Chill until set. Garnish with whipped topping and additional whole or halved strawberries.

Recipe: Strawberry and Banana Ice Box Pie.
Strawberry and Banana Ice Box Pie
1 graham cracker pie crust
2 medium bananas, sliced
8 ounces fresh strawberries, sliced
1 (8-ounce) package cream cheese, softened
11/3 cups sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla
Line pie crust with sliced bananas and strawberries. Whip cream cheese until light and fluffy; gradually beat in sweetened condensed milk. Add lemon juice and vanilla; blend well. Whip 4 sliced strawberries into mixture. Pour over bananas and strawberries. Garnish with slices of strawberries around top. Chill for 2 hours or until firm.
Serves 6.

Recipe: Luby's Carrot Raisin Salad.
Luby's Carrot Raisin Salad
2 pounds carrots, peeled and trimmed
1 cup raisins
1 cup canned, crushed pineapple, drained
1 cup mayonnaise
1/2 cup powdered sugar
Shred carrots using large holes of grater. In large bowl, combine carrots, raisins and pineapple. In a small bowl, mix mayonnaise and powdered sugar until well-blended. Pour over carrot mixture and toss lightly to coat evenly. Cover and refrigerate at least 2 hours.
Serves 8.
