Carrots on the side.

Here's a resolution: Liberate carrots from the dread medley. And spare me the prepeeled pellets, please! (Precut, prewashed minis are great shortcuts at home;I'd like the real thing when I'm out.) Steam 'em lightly with almonds, mint, ginger or cilantro. Pureed or shredded with honey or cinnamon, they make great mash, puddings, cakes and bread. Shaved in ribbons, they are a great wheat-free pasta.
