I'll have another . . . Genuine BLT sandwich. An unknown sandwich genius fused crisp, cool iceberg, juicy, ripe tomatoes and bacon fat fresh out of the skillet 100 summers ago. That beautiful synergy is best set in the clash of crusty, puffy white bread slippery with lush mayonnaise. Modern "BLT" burgers, pizzas, wraps and tortillas don't come close. Go for the real thing at any diner or family restaurant with a busy skillet. Or make your own. - CHRIS SHERMAN, Times food critic
