I've had enough . . .

By CHRIS SHERMAN, Times Food Critic

I've had enough . . .

Greens of the wrong color.

Some folks say fancy greens are a con and no better than iceberg. I disagree. The range of texture, shape and flavors from bitter to butter make a salad to me - but only when they are green. Well, I'll let in red, but greens that have wilted into dirty yellow or decayed to black shouldn't leave the kitchen. Don't brag on "greens" unless you pick through them with care.
