Even without sugar, fruitcake still sweet

Ethelene Hale wanted a recipe for diabetic fruitcake and Arlene Tracht is happy to oblige. It's a bit of work to prepare some of the ingredients but well worth it.
Deborah Griswold shares a recipe for sugarless fruitcake made with your favorite artificial sweetener. Deborah got the recipe from allrecipes.com and says it is very moist.
Dessert
Diabetic Fruitcake
For: Ethelene Hale of Brooksville
From: Arlene Tracht of Tarpon Springs
1/2 cup snipped dried figs
1/2 cup chopped dates
1/2 cup chopped prunes
1 cup crushed pineapple
1 cup dark raisins
2 cups chopped apple
1/2 cup chopped walnuts
1/2 cup orange juice
2 cups whole wheat flour
1/2 cup wheat germ, toasted
1 tablespoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 eggs
- Combine figs, dates, prunes, pineapple, raisins, apple, walnuts and orange juice in a bowl. Add the remaining ingredients and mix well.
- Pour into a lightly oiled 10-inch tube pan. Bake at 350 degrees until cake tests done, about 40 to 50 minutes.
Makes 15 servings.

Sugarless Fruitcake
For: Ethelene Hale of Brooksville
From: Deborah Griswold of Dunedin 1 cup chopped golden raisins
1/2 teaspoons salt
1 1/2 cups chopped walnuts
1 cup chopped cranberries
1 cup unsweetened crushed pineapple
1/4 cup grated lemon peel
1 cup flaked coconut
1/3 cup orange juice
8 packets artificial sweetener
1 teaspoon ground mace
1 teaspoon ground allspice
1 teaspoon baking soda
1 1/2 cups all purpose flour
- Mix sugar substitute with orange juice. Pour over chopped cranberries. Soak 1 hour, mixing often.
- Mix raisins, nuts, coconut and lemon rind in flour until well coated. Add cranberries and orange juice mixture. Sprinkle baking soda over mixture and mix. Mix in spices. Fold in crushed pineapple. Pour batter into a greased and floured 9-inch loaf pan.Bake at 325 degrees for 40 minutes. Cool.
Makes 12 servings.

Lila Languerand is searching for two recipes her grandmother used to make. One is for vinegar fudge and the other is for what she calls a gingersnap whoopie pie. It was a gingersnap cookie with a stiff white mixture in the middle. Debbie Drewes is looking for a recipe for a sandwich she enjoyed in a New York City restaurant, the English Pub, called the Nottingham. It was a bit like a Monte Cristo sandwich with no sugar on top and had a combination hollandaise, cheddar and possibly beer sauce served with it. She would love to taste that sandwich again.
