Quick chicken recipes are full of surprises

Lyn Wood wanted some new chicken recipes to add to her regular weekly menus. Dolores Diamond's family enjoys crispy chicken, and Dolores hopes Lyn enjoys it too. Marjorie Dahl shares two recipes for Lyn to try. The first makes its own gravy, which, if served with mashed potatoes, would be real comfort food. Marjorie says that while this is a great recipe for a potluck supper, be sure to transport the chicken and gravy in separate containers. Marjorie's second recipe is for forgotten chicken. This is a good dish for a larger group: It serves eight to 10. Lois Hardy sent a recipe for surprise chicken. Although it bakes for an hour, it whips up in no time.

Crispy Chicken

For: Lyn Wood of St. Petersburg

From: Dolores Diamond of St. Petersburg

6 pieces chicken, quarters or breasts

1 box Rice Krispies

1/2 stick margarine

Salt, pepper, garlic powder and paprika to taste

- Place Rice Krispies in blender and reduce to crumbs. Preheat oven to 350 degrees.

- Melt margarine in frying pan and add seasonings. Coat chicken with the margarine mixture. Dredge chicken in Rice Krispies to coat.

- Place on a pan that has been lined with Reynolds Release foil. Bake at 350 degrees for 1 to 1 1/2 hours, until crispy.

Makes Its Own Gravy Chicken

For: Lyn Wood of St. Petersburg

From: Marjorie Dahl of St. Petersburg

2 1/2 to 3 pounds chicken pieces, excess fat removed

2 tablespoons oil

2 cups high-quality chicken broth

1/2 cup flour

Salt and pepper to taste

- Brown chicken on all sides in oil, in large skillet over medium heat. Put chicken in a 9-inch by 13-inch or 10-inch by 12-inch baking pan sprayed with non-stick cooking spray. Do not allow overlap pieces. Do not add juice from skillet to baking pan.

- Shake broth and flour together in a large jar or mix well until smooth. Salt and pepper chicken to taste. Pour broth over chicken, cover and bake at 300 degrees for 2 hours. Chicken will be tender and make its own gravy.

- Place chicken in a covered pan to keep warm until ready to serve. Pour gravy into gravy boat. Use gravy on mashed potatoes and chicken.

Serves 4 to 6.

Forgotten Chicken

For: Lyn Wood of St. Petersburg

From: Marjorie Dahl of St. Petersburg

3 pounds chicken pieces

1 10 3/4-ounce can cream of mushroom soup

1 envelope onion soup mix

3/4 cup sherry

- Preheat oven to 325 degrees.

- Place chicken in 2-quart casserole. Mix soups and sherry together until well combined. Spoon mixture over chicken. Cover casserole dish. Bake at 325 degrees for 3 hours.

Serves 8 to 10.

Surprise Chicken

For: Lyn Wood of St. Petersburg

From: Lois Hardy of Clearwater

2 broiler fryers, cut into quarters or serving pieces

1 (8-ounce) bottle Russian dressing

1 (10-ounce) jar apricot jam or preserves

1 package dry onion soup mix

- Place chicken pieces in large baking dish. In blender, combine dressing, jam and soup mix. Blend until smooth. Pour over chicken and bake at 350 degrees for about 1 hour. Baste occasionally.

Recipe requests

Donald Lorentz is looking for a recipe for cheesecake made with cottage cheese. His mother made it back in the '50s, and he wants to try it again. Ruth Angela's mother made fish cakes, which Ruth would enjoy making and eating if she could find a recipe for them anywhere.
