"Impossible pie" makes its own crust.

James Spicer Jr. requested recipes for a crazy crust pie, also known as an impossible pie. A crazy crust pie is a pie that makes its own crust. Many readers sent in their favorites in hopes that James will enjoy them. Jacky Randol's version, Impossible Pumpkin Pie, is perfect for fall. As a bonus, it's easy to make.
The crazy crust pie is also a favorite of Geri Brizzi. She shares Impossible Cherry Pie with a streusel topping. She says it smells great while baking and always comes out perfectly. Richard Holtmeyer shares a recipe for Coconut Impossible Pie.

Impossible Pumpkin Pie
For: James Spicer Jr. of Homosassa

3/4 cup sugar
1/2 cup Bisquick
2 tablespoons butter or margarine
1 13-ounce can evaporated milk
2 eggs
1 (16-ounce) can pumpkin
2 1/2 teaspoons pumpkin pie spice
2 teaspoons vanilla
- Grease a 9- or 10-inch pie plate. Beat all ingredients until smooth, about 1 minute with blender on high or 2 minutes with hand beater. Pour into pie plate. Bake at 350 degrees about 50-55 minutes or until knife inserted in center comes out clean.
Impossible Coconut Pie

1/2 cup Bisquick
1/2 cup sugar
4 eggs
3 1/2 ounces sweetened flaked coconut
1 teaspoon vanilla
3 tablespoons butter
- Put all ingredients in a blender and mix. Pour into a 9-inch buttered pan or pie plate. Bake at 400 degrees for 25 to 30 minutes. Serve cold.
Impossible Cherry Pie
For: James Spicer Jr. of Homosassa

1 cup milk
2 tablespoons margarine or butter, softened
1/4 teaspoon almond extract
2 eggs
1/2 cup Bisquick baking mix
1/4 cup sugar
1 (21-ounce) can cherry pie filling
Streusel (recipe follows)
- Preheat oven to 400 degrees. Grease 10-inch pie plate. Beat all ingredients except pie filling and streusel 15 seconds in blender on high speed or 1 minute with wire whisk or hand beater or until smooth. Pour into pie plate. Spoon pie filling evenly over top. Bake 25 minutes. Top with streusel. Bake until streusel is brown.
Streusel
1/2 cup Bisquick baking mix
1/2 cup packed brown sugar
1/2 teaspoon ground cinna- mon
2 tablespoons firm marga- rine or butter
- Mix Bisquick, brown sugar and cinnamon together, cut in margarine until crumbly.
Makes 8 servings.
