Jack's Bistro is open in Pinellas nord. Namesake Jack Koch, a former corporate R&D chef, now serves house pate, onion tart, caviar, bouillabaisse, cassoulet and Nicoise sandwich. At Jack's (31876 U.S. 19 N, Palm Harbor), lunches start at $5.95, dinners at $9.95.
Mia, Hyde Park's next big thing, goes beyond samba. The new import from Zoe's/Aqua/Bistro 41 in Naples and Fort Myers opens with 200 seats and an eclectic menu full of specials. Chef Gary Pfenning promises the likes of chardonnay risotto and tilefish stuffed with stone crab. Prices at Mia (1631 Snow Ave., Tampa; (813) 258-9400) run from $12 to $30.
Construction has started on Beef O'Brady's to join Newk's and the Outpost outside the Ice Palace in Tampa.
Profusion (International Plaza, Tampa) holds a grand opening this weekend with an infusion of energy from partner Keyshawn Johnson and the group's Montreal chefs. Four-course dinners with wine are $29.88.
Farewell toast for Jean-Louis. American chefs would have tipped their toques at the death last week of Jean-Louis Palladin except that he himself could rarely fit one over his steel-wool hair. Palladin was France's youngest 2-star chef and the Lafayette of America's food revolution. You could taste his love of American ingredients at Jean-Louis in the Watergate (since closed) and now at Napa in Vegas -- and from a generation of chefs he taught so generously.
